Lemon Poppy Seeds Pancakes



              Pancakes are a sweet treat for our morning breakfast rhythms. The soft spongy bed of pancakes drizzled with warm maple syrup with some fruits on side make for a delicious appetite. With very few basic ingredients the regular pancakes are made. Add your favorite flavors like lemon or boiled berries and make it more unique for the day. This is completely for lemon lovers. The tanginess from the lemon juice and the grated zest flavors combination with sweet maple syrup will surely meet your morning breakfast cravings.



Ingredients:
  • 1 cup all purpose flour
  • 2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon lemon zest
  • 1 teaspoon poppy seeds
  • 3/4 cup butter milk
  • 1/4 cup water
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 large egg
  • 2 tablespoon oil
  • butter as needed



Method:
  • To start making Lemon Poppy Seeds Pancakes, combine the dry ingredients(flour, sugar, salt, baking soda, baking powder, lemon zest, poppy seeds) in a medium bowl. 
  • In another bowl whisk together egg, buttermilk, lemon juice, vanilla extract, oil and water. Heat a griddle over medium heat and brush butter generously. 
  • Add the wet ingredients to the dry and stir well to combine. When the griddle is hot enough pour about 1/4 cup of prepared batter. 
  • When the pancakes bottoms are brown and the top surface starts to bubble which takes about 2 to 3 minutes, flip the pancakes and cook until the second side is brown for a minute or two. Serve hot with some fresh fruits and maple syrup.
