Bagel Sandwich with Sundried Tomato, Raw sprouts and cream cheese



       Ended up with Leftover mashed potatoes from yesterday dinner then lets make it as a delicious spread for our breakfast sandwich the next morning. Here is a quick and easy Bagel breakfast Sandwich recipe with Sundried Tomato, Raw sprouts, Chobani Greek yogurt and leftover mashed potatoes. Try to serve this with some fruits on side for a complete breakfast.





Ingredients:
  • 2 tablespoon leftover mashed potatoes
  • 2 tablespoon Chobani greek yogurt
  • 1 tablespoon cream cheese
  • 1/3 cup fresh bean sprouts
  • 3 slices sun dried tomatoes, finely chopped
  • 1 teaspoon dried parsley
  • 1 dried fig, finely chopped
  • 1 teaspoon lemon juice
  • pinch of salt
  • 3 large bagels, toasted



Method:


  • To start making in a small bowl add leftover mashed potatoes, chobani greek yogurt, bean sprouts, chopped dried tomatoes, parsley, fig, salt, lemon juice and combine using a fork. 
  • Take the toasted bagel, separate into two and spread one heaped tablespoon of prepared spread on the bottom slice. 
  • Cover with the top bagel and serve with fruit on the side.
