Gobi Manchurian





              Gobi(Cauliflower) Manchurian is a great appetizer which tempts vegetarians, infact, everybody. This is an Indian-Chinese recipe. We fry the cauliflower first dipping in some batter and then stir it in sweet and spicy sauce. Now Deep frying makes this dish delicious but is totally optional - you can pan fry, shallow fry or roast in your oven like I am doing so we can use very less oil to make this dish. If you wish, you can convert this to a wonderful side for Naan or Rotis (Indian Breads) by diluting the sauce to gravy consistency. I have been having this all the time with Vegetable Fried rice since I was 6. Delicious and satisfying for any age group.






Ingredients:

For Roasting Cauliflower :
  • Cauliflower - 1 small sized
  • All Purpose Flour - 1/2 cup
  • Corn Flour - 1/4 cup
  • Ginger Garlic paste - 1/2 teaspoon (optional)
  • Black pepper powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Soy sauce - 1 teaspoon
  • Salt - To taste
  • Oil - 1 tablespoon
  • Water - 2 cups (For boiling cauliflower)
  • Water - 1/2 cup + 2 tablespoons (For the batter)

For the Sauce :
  • Scallion - 1/2cup (Finely chopped)
  • Scallion Greens - 1/4 cup (Roughly Chopped for garnish)
  • Bell pepper - 1/2 cup (Roughly chopped)
  • Garlic - 1 heaped tablespoon (Finely chopped)
  • Tomato Ketchup - 1 tablespoon
  • Soy Sauce - 1 tablespoon
  • Green Chilli sauce - 1 teaspoon
  • Red Chilli Sauce - 1 teaspoon
  • Brown Sugar - 1 teaspoon
  • Corn Flour - 1 tablespoon
  • Oil - 2 tablespoon
  • Salt - To taste
  • Water - 1/2 cup


Method:

For Roasting Cauliflower:
  • Wash and Clean the cauliflower and Separate the florets to bite sized pieces. Boil 2 cups of water in a sauce pan with some salt. Switch off the stove and add the florets to the boiled water, Keep that covered with a lid for 15 minutes and let cauliflower get blanched (This process helps us to half cook our cauliflower florets).


  • Drain the florets after 15 minutes and pat dry with a tissue. In a bowl, Add All purpose flour, Corn flour, Ginger garlic paste, Soy sauce, Black pepper and Red chili powder with required salt. Add water little by little to this and bring to a batter consistency without lumps.


  • Pre-heat oven to 375 degree, Line a baking tray with foil paper. Spray some cooking spray or drizzle some oil. Dip cauliflower florets in the batter and place it on the foiled tray. Once all florets are placed drizzle some oil on the top and oven roast for 30 minutes or until the florets are golden and crispy, keep aside(If planning to deep fry then start heating oil in medium flame in a frying pan with enough oil to fry the florets. Dip each floret in the prepared batter and fry until they are golden).



For the Sauce:
  • In a fry pan, Heat oil. Add garlic and let it roast. Add chopped onions and salt, saute until they are translucent. Add chopped bell peppers and cook until they are soft.


  • Add all the sauces listed that is Tomato sauce, Soy sauce, Red chilli sauce, Green Chilli sauce saute for a minute on low flame. Add in Brown sugar, Corn flour stir well. Add 1/3 cup of water and saute until they are slightly cooked like for a minute. 


  • Switch off the stove and add the oven roasted cauliflower, stir well until sauce is coated nicely. 




Serve with Scallion greens garnished
