Ever wondered the easy way to prepare a pot of pulao (Still confused if I should use Pulao or Pulav or Pilaf?) with vegetables of your choice - then here it is. Super simple recipe that I love to prepare any number of times. This is one regular dish I cook for pot-luck parties. The colour - white rice, with red and green spots is so attractive - I usually don't go crazy about what I cook, but this one is surely an exception.
Ingredients:
Basumathi Rice - 2/3 cup
Beans - 2/3 cup
Carrot - 2/3 cup
Peas - 2/3 cup
Onion - 2/3 cup (Finely chopped)
Cooking oil - 1 tablespoon
Ghee - 1 tablespoon
Garlic - 1 tablespoon(Finely chopped)
Cardamon - 1 no
Star anise - 1 no
Cinnamon - 1/2 inch stick
Bay leaf - 2 no's
Cumin Seeds - 1/2 teaspoon
Fennel Seeds - 1/4 teaspoon
Salt - as needed
Water - (2/3 cup + 1/2 cup)
Method:
- Heat Ghee and oil, add Cardamon,Star anise,Cinnamon,Bay leaf,Cumin seeds,Fennel seeds and saute for 30 seconds.
- Add chopped garlic and saute to light brown.
- Add onion and saute till they are transparent.
- Add the vegetables with required salt and saute for 2 minutes(until vegetables are half cooked).
- Now add Rice and saute for 30 seconds.Then add water, mix well and check for salt. Pressure cook running only one whistle and switch off the stove.
- Open after the pressure is released completely and mix the pulao well.
- Vegetable Pulao is ready to serve.
Note:
- I use India Gate Basumathi rice. We can also use normal rice/Sona masoori.
- I also add Corn - 1/2 cup and Potato - 1/4 cup - but here I couldn't add because I din't have them at home.
- Add some Raisins and Cashew to increase the richness of the rice.
- Add only 1/8th cup of chopped onions if you want your pulao to be pearl white.
- Rice cooking differs from the type of rice used. For any basumathi rice I prefer only one whistle. For sona masoori it might take 3 whistles to cook.

ReplyDeleteThank you priya...i am sure the rice will not get overcooked if water level,whistle count are perfect. i dont soak rice and i use 1-1/4 cup measurement for the cup of rice...you have to try this way because it saves time.

We should half cook the vegetables. One whistle is absolutely perfect. i tried the same with different kind of basumathi rice. in chennai also i did the same. thank you for your valuable comment my sissi

ReplyDeleteI make it more or less the way u mentioned..but the way i cook rice differs.
The litle changes i do 4 making the rice cook and look good is i use 2:1 ratio of water and basmati rice. i get cooked long pulav rice in 5-6min over 4-5 whistles in medium flame.
I cook the rice first in cooker, without putting the veggies but with ghee, cloves, cashews, and onions.
will saute the chopped veggies in another pan with litle ghee 4 sum 5min and then add them to the cooked pulav rice and give a quick mix without harming the texture of the rice.
that makes it complete n yummy :)

DeleteMay be there is a difference with rice...i hope basumathi cooks fast...wonder how it goes for 4-5 whistles.i use 1-1/4 cup water for 1 cup of rice.
i loved your version...i am not sure whether that takes a bit more time while preparing. The version you mentioned here is not one pot meal. you cook both separate and then mix up. i will try this version the way you mentioned and will also post it in future....Thank you dear

Thank you satya for stopping by...you can follow the same process in a big pot instead of cooker and close the lid of your pot. Try to keep the flame in medium low.
