Potato Fry / Urulaikizhangu Poriyal

              

               I can say this is the best friend for all variety rice. My husband cannot imagine lemon rice or curd rice in his lunch box without potato fry.       

               Everyone love this recipe at home. until now i have tasted 4 different versions of potato fry from my relatives. This one i learn from my MIL. i did get some fans for this version from our pot-luck parties. so do give a try.







Ingredients:

Raw potato finely diced   -   1 cup
Oil                                 -   3 teaspoon
jeera / jeerakam              -   1/2 teaspoon
Urad dhal                        -   1 teaspoon
Dry red chilli                   -   1-2 no's
Asafoetida / Hing            -   1/4 teaspoon
Turmeric powder             -    1/4 teaspoon
Salt                               -    1/4 teaspoon or as needed
Ajwain                           -    a pinch
Red chilli powder            -   1 teaspoon
Coriander powder           -   1/2 teaspoon


Method:
  1. Heat oil, add jeerakam(let it splatter).add red chilli and urad dhal(allow it to slightly brown)
  2. Add Asafoetida, turmeric powder and mix well with the oil.
  3. Add the diced potatoes,salt and saute for 5 minutes(till pototoes are transparent) 
  4. Add ajwain, chillipowder, coriander powder and cover them on the low-medium flame for 5 minutes
  5. Potato fry is ready to serve.


Heat oil, add jeera(allow to splatter). add redchilli and urad dhal(allow it to brown slightly)


Add Asafoetida, turmeric powder and mix well with the oil.


Add the diced potatoes,salt and saute for 5 minutes(till pototoes are transparent)


Add ajwain, chillipowder, coriander powder and cover them on the low-medium flame for 5 minutes


Potato fry is ready to serve
